Smashed Tater Tot Crostini
These are the kind of appetizers that make you grin as soon as you take a bite. The crispy smashed tater tot base is perfectly salty and crunchy, while the onion jam adds a sweet depth that pairs beautifully with sharp, melted cheddar.

Instructions
Preheat the oven to 425ºF / 220ºC degrees.
Lay the tater tots on a parchment-lined baking sheet and bake for around 15 minutes until they start to brown.
Remove from the oven and, using a measuring cup, smash each tot until flattened down.
Continue to bake for another 15 to 20 minutes until golden brown.
Allow to cool for five minutes, then top with onion jam and a slice of sharp cheddar.
