Roasted Cauliflower and Broccoli Bake

Serve as a delicious side dish or as a main with some freshly baked bread. Yummy!

Ingredients

  • 1 head cauliflower cut into florets
  • 2 tbsp olive oil
  • 1/2 tsp seasoned salt
  • 3/4 cup sharp cheddar cheese shredded (85g)
  • 1 bunch scallions sliced

Instructions

  • Preheat the oven to 450F / 230C
  • Toss the cauliflower florets with the olive oil and sprinkle with the seasoned salt then tip onto a lined baking sheet.
  • Bake for around 30 minutes until browned and tender turning half way through.
  • Sprinkle with the cheddar cheese and bake for a further 5-7 minutes until melted and crispy.
  • Transfer to a serving platter and sprinkle with the sliced scallions.
