Gingerbread Bark

This bark comes together fast and always disappears even faster. The mix of creamy vanilla candy, crunchy gingersnaps, and chewy gumdrops delivers the most nostalgic holiday flavor in every bite.

Ingredients

  • 1 lb vanilla flavor candy coating 450g
  • 9 gingersnap cookies approx. depending on the size
  • ½ cup gumdrops 80g
  • 3 tablespoons chopped crystallized ginger
  • Sprinkles optional

Instructions

  • Line a rimmed baking sheet with parchment paper.
  • Melt the candy coating, reserve one cup in a small jug. Spread the rest in a rectangle on the baking sheet.
  • Place the cookies one inch apart on the candy coating pressing down gently.
  • Scatter with the gum drops and chopped ginger.
  • Drizzle over the reserved candy coating.
  • Allow to cool completely to set then break into pieces. Store in an airtight container.
