Heat 1 tablespoon of the olive oil in a large skillet. Sprinkle the everything bagel seasoning on both sides of the chicken.
Add the chicken and cook on one side until browned, then flip to cook the other side.
Remove from the skillet and set aside.
Add the remaining oil to the skillet. Add the onion and cook until softened. Stir in the spinach and cook until wilted.
In a jug, whisk together the sour cream, wine, and ½ teaspoon of everything bagel seasoning. Add to the pan with the cream cheese.
Stir until melted and hot.
Return the chicken and any juices to the pan, heat through, then serve.
