Preheat the oven to 350F / 175C and line a baking sheet with parchment paper.
Melt one tablespoon of butter in a skillet and cook the walnuts for around 3-5 minutes until toasted then transfer to a bowl.
Wipe the skillet clean then melt the remaining butter and cook the cranberries over a medium to low heat until they begin to break down and soften.
Whisk together the bourbon and cornstarch then stir this into the cranberry mixture and bring to a boil. Cook stirring continuously for around 3 minutes then turn off the heat.
Place the brie on the prepared baking sheet and bake for around ten minutes. Carefully transfer the warm brie to a serving platter then top with the bourbon cranberries. Sprinkle over the chopped walnuts.
Serve with crackers, drizzle with honey and top with a sprig of fresh thyme.
