Almond Avocado and Cocoa Mousse

Ingredients

  • 2 large ripe avocados
  • 4 tablespoons almond butter
  • 4 tablespoons coconut flakes preferably unsweetened
  • 6 pitted dates
  • ¼ teaspoon vanilla extract
  • cup cocoa powder 35g
  • A pinch of salt
  • Almond milk if required

Instructions

  • Soak the dates in water until softened.
  • Once soft, place all the ingredients into a blender and blend until smooth. Add a little almond milk if the mixture is too thick.
  • Spoon or pipe into serving glasses then chill for a minimum of 30 minutes before serving.
