Cranberry and Walnut Baked Brie

  • 2 brie wheels 8oz each (226g)
  • 2 tbsp unsalted butter divided
  • 1 cup frozen cranberries thawed 100g
  • 1/2 cup walnuts chopped 60g
  • 1/3 cup bourbon 80ml
  • 1 1/2 tsp cornstarch
  • Crackers to serve
  • Honey and fresh thyme sprigs for garnish

Instructions

  • Preheat the oven to 350F / 175C and line a baking sheet with parchment paper.
  • Melt one tablespoon of butter in a skillet and cook the walnuts for around 3-5 minutes until toasted then transfer to a bowl.
  • Wipe the skillet clean then melt the remaining butter and cook the cranberries over a medium to low heat until they begin to break down and soften.
  • Whisk together the bourbon and cornstarch then stir this into the cranberry mixture and bring to a boil. Cook stirring continuously for around 3 minutes then turn off the heat.
  • Place the brie on the prepared baking sheet and bake for around ten minutes. Carefully transfer the warm brie to a serving platter then top with the bourbon cranberries. Sprinkle over the chopped walnuts.
  • Serve with crackers, drizzle with honey and top with a sprig of fresh thyme.
