Everything Bagel Creamy Chicken Skillet

Ingredients
- 3 cups spinach roughly chopped
- 1 lb chicken breasts 450g
- 2 tsp everything bagel seasoning
- 2 tbsp olive oil
- 1 onion halved and sliced
- 1/3 cup white wine or chicken broth 80ml
- 1/4 cup sour cream 60g
- 2 oz cream cheese cubed (55g)
Instructions
- Heat 1 tablespoon of the olive oil in a large skillet. Sprinkle the everything bagel seasoning on both sides of the chicken.
- Add the chicken and cook on one side until browned, then flip to cook the other side.
- Remove from the skillet and set aside.
- Add the remaining oil to the skillet. Add the onion and cook until softened. Stir in the spinach and cook until wilted.
- In a jug, whisk together the sour cream, wine, and ½ teaspoon of everything bagel seasoning. Add to the pan with the cream cheese.
- Stir until melted and hot.
- Return the chicken and any juices to the pan, heat through, then serve.
