Copycat Subway Footlong Cookie
Ingredients
- ½ cup butter softened (113g)
- ¾ cup light brown sugar 165g
- ¼ cup granulated sugar 50g
- 1 extra large egg
- 1 tsp vanilla extract
- 1½ cups all purpose flour 180g
- 1 tsp baking soda
- ½ tsp salt
- 1 cup semi sweet chocolate chips 170g
Instructions
- Preheat the oven to 350F/180°C and grease and line two loaf pans.
- Beat the butter and sugars until light and fluffy.
- Add in the egg followed by the vanilla and beat until well combined.
- Add in the flour and baking soda and salt and mix until there are no more visible signs of the flour. Do not over mix.
- Use a spatula to stir in the chocolate chips.
- Divide the mixture between the two loaf tines and bake in the oven for 20 to 25 minutes until the edges are starting to set but the centers are still spft.
- Allow to cool for ten minutes in the tin then serve.
